Dried tofu sheets are a food product made from soybeans through a series of refined processing steps. The production process mainly includes the following steps:

  1. Raw material preparation: Select fresh soybeans with plump grains, golden color, no mildew, and no insect damage. Remove inferior beans, impurities, and sand through screening to ensure the purity of the raw materials.

  2. Peeling and soaking: The selected soybeans are peeled to improve protein utilization and yield. Then soak the soybeans in clean water. The soaking time is adjusted according to the season and temperature to allow the beans to fully absorb water and swell, softening the internal tissues.

  3. Grinding and boiling: Grind the soaked soybeans into pulp, filter out impurities, and then heat and boil the pulp to a certain temperature.

  4. Extracting the dried tofu sheet: Pour the cooked soy milk into a molding pot, heat and keep warm to allow the surface of the soy milk to solidify into a thin oily film (oil skin). Use a special tool to extract and rotate it into a cylindrical shape and hang it on bamboo poles.

  5. Drying and packaging: After the dried tofu sheets are formed, they need to be dried immediately to prevent spoilage. The dried tofu sheets are softened to reduce brittleness, and finally packaged.

After the above steps, the light yellow, mellow-flavored dried tofu sheets are made.
